Colorado Real Estate Pros Pasta Salad

Last month we let you in on my “secret” grilled shrimp recipe. This month, the perfect pasta salad with a little bit of a unique twist!
Ingredients

• Rotini Pasta
• Cherry Tomatoes
• Sliced Cucumber
• Avocado
• Shredded Carrots
• Mozzarella cheese balls
• Red wine vinegar
• Extra-virgin olive oil
• 1/8 cup lemon juice
• Fresh Garlic
• Salt & Pepper

Instructions

• Slice avocados and place aside.
• Mix pasta, remaining vegetables, and cheese together in a large bowl.
• Mix red wine vinegar, olive oil, lemon juice, garlic, and salt & pepper together in a bowl to create the dressing.
• Pour dressing over the salad and mix again.
• Garnish with avocado slices and enjoy!
