Getting out in the Great Outdoors
As the weather warms up, many of us are tempted with the promise of a normal Colorado summer. Bright mornings to warm up the day. Overcast, yet warm afternoons. Cool, striking sunsets over the foothills of Horsetooth Rock. Yet we are all still very much aware that this is anything but a “normal” summer!
This is why Colorado Real Estate Pros is encouraging everyone to do something outdoors every month, every week, and every day – this summer!
Monthly: Go fishing, hiking, or boating
The Fort Collins / Loveland area has plenty of bodies of water that you can easily pop over to in the evening or early on a weekend for good fishing or boating. Horsetooth Falls, hiking the A, and the Devil’s Backbone in Loveland are all quick hikes that you can do each week. For a longer hike, try heading up to the Blue Lake Trailhead.
Weekly: Grilling at home, playing at the park
With parks opening back up, it’s a great time to go out and have a catch with a Frisbee or baseball with your family or friends. Maybe set up some cornhole boards or other lawn games. Grilling on your patio is a great way to spend any evening. Try my Honey BBQ Shrimp Recipe below!
Daily: Go for a walk, a run, or bike ride
Fort Collins is one of the best cities in the entire nation when it comes to trails inside the city. Chances are there is a trail of some kind for riding, running, or walking within a minute or two from your home. The convenience of Fort Collins makes this extremely easy to do, and is a great way to decompress at the end of a day!
"Famous" Sawatzky Shrimp Recipe!
My favorite way to grill shrimp that is sweet, tangy, and flavorful. Don’t say I didn’t warn you how delicious it is!
1/2 cup BBQ sauce (I prefer Sweet Baby Ray’s BBQ)
1/4 cup Honey
1/4 cup lemon juice
4 cloves of fresh garlic
1 tablespoon olive oil
1/4 cup unsalted butter (half stick)
Salf & Pepper
1 to 1.5 pounds of fresh shrimp
-Preheat your grill
-In a medium bowl, mix barbeque sauce, honey, lemon juice, and garlic.
-In a small sauce pan or bowl (microwave) melt butter.
-Mix melted butter with olive oil and salt & pepper
-Skewer shrimp 5-6 per skewer
-Brush shrimp liberally with butter/oil mix
-Grill for 2 minutes, then flip and brush shrimp with barbeque mixture
-Grill for 2 more minutes
-Flip shrimp every 60 seconds, alternating brushing between butter mixture and barbeque mixture until the shrimp are done
