Jamaican Jerk Chicken Recipe

There’s nothing better than GREAT Jamaican Jerk Chicken recipe. It’s right up there with good barbeque. Try out this fantastic recipe from Tasty for amazing jerk chicken!

  • 3-pounds chicken
  • 3 scotch bonnet or habanero peppers, chopped
  • 4 cloves garlic, chopped
  • 1 tablespoon fresh thyme
  • 1 tablespoon ground allspice
  • 2 onions, chopped​
  • 1 tablespoon light brown sugar
  • ½ tablespoon nutmeg
  • ½ tablespoon minced ginger
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice
  • ½ cup white vinegar
  • salt and pepper, to taste
1. Prepare the chicken by removing the backbone using a pair of kitchen shears or a sharp knife. Transfer the chicken to a baking sheet and and flatten it down to spread the chicken out as much as possible.

2. In a blender or food processor, combine the peppers, garlic, thyme, allspice, onions, brown sugar, nutmeg, ginger, olive oil, lime juice, vinegar, salt, and pepper. Blend until smooth.

3. Pour the marinade over the chicken. Cover with foil or plastic wrap and marinate in the fridge for at least 3 hours or overnight.

4. Preheat the oven to 400°F (200°C).

5. Remove the foil or plastic wrap and roast the chicken for 45-50 minutes, until cooked through. Rest for 10 minutes on a cutting board before carving and serving.

Lawn & Sprinkler tips for your home in the spring!

We have had an unusually wet spring in the last couple of weeks, so grass is ready to grow and fill out. Preparing to have a beautiful lawn for your Colorado home can be much easier than you think. With just a little bit of care and time, you can have a thick, full lawn that is ready for the summer!
Follow these quick tips to make sure you have an amazing lawn:
  1. Loosely rake your lawn in the spring to remove debris. If your lawn has branches, leaves, buds, or debris weighing it down. In addition, this debris can actually prevent water and nutrients from getting to the ground soil. Make a quick pass over your lawn to remove loose leaves, blades of grass, sticks, and more.
  2. Aerate your lawn! Aeration is one of the simplest, most effective ways to prepare your lawn for growth. Not only do the holes allow water and nutrients to penetrate deeper into the soil, but it helps promote new, healthy growth of grass. If you don’t have an aeration machine, any local lawn care companies can help you complete the task fairly cheaply and quickly.
  3. Fertilize and overseed thin areas in your lawn. One of the most frustrating parts about having a lawn is that it may grow uneven or not at all in certain spots. In these spots, be sure to overseed by scattering extra grass seeds, and after aeration use fertilizer to help the new seed take hold.
  4. Weed obvious areas and along edges. You want to make sure that your grass has room to grow, and this means you can’t have soil space being taken up by dandelions and weeds. Make sure to pull out the roots as best you can, and remove any obvious weeds from edges where they tend to take hold. After this, you can optionally apply herbicides or weed-killers to keep weeds from coming back.
  5. Turn on and blow out sprinklers when ready. We have had enough moisture in the last few weeks to keep grass growing, but during dry weeks, be sure to get your sprinklers running to keep the grass healthy. It’s probably a good idea to have your sprinklers inspected and ready to go by the end of May.
